Small king oysters: halve lengthwise, sear 2-3 min/side.
Large (thick stem): slice into 1/2-inch rounds, sear 3-4 min/side.
The thicker the slice, the meatier the result.

Don't Have Cast Iron?
Any heavy pan works. Nonstick is fine — king oysters release enough moisture and oil that sticking isn't an issue.
