Plov (Central Asian Pilaf)
Uzbek-style rice pilaf with lamb, carrots, and whole garlic heads, cooked in rendered lamb fat with cumin and barberries.
Why It Works
The zirvak (fried base of meat, onions, and carrots) seasons the rice as it steams on top. Each grain stays separate because the rendered fat coats it, preventing clumping.
