Beef Liver
STOVETOPPan fry med-high 2-3 min/side with onions.
Same as chicken liver — must stay pink. Needs fast, controlled heat.
Bone Marrow
OVENRoast 450°F, 15-20 min until bubbly and jiggly.
Only real option — oven’s radiant heat melts marrow evenly inside the bone. Stovetop can’t do this.
Chicken Liver
STOVETOPSauté med-high in butter 2-3 min/side, stay pink inside.
Fast, high heat. Liver MUST stay pink inside or it becomes chalky and bitter. Stovetop gives you instant control.
Heart (Sliced)
STOVETOPSear med-high 1-2 min/side.
Treat like a steak — thin slices need fast, hot sear. Lean muscle meat that dries out quickly.
Oxtail
OVENBraise 325°F, 3-4 hrs.
Extremely collagen-rich — needs long, even braising. Oven’s steady heat breaks down collagen into gelatin perfectly.
Tongue
STOVETOPSimmer in broth 2-4 hrs, peel, optionally sear slices.
Traditional long simmer/poach is the standard. After peeling, an optional sear adds texture contrast.
