Best Method OVEN

Roast 425°F, 12-15 min.

Even roasting with slight char on the tips. Hands-off and consistent. Stovetop gives more char but requires attention.

Step-by-Step

1. Snap off woody ends (they break at the natural point).

2. Toss with oil, salt, pepper.

3. Arrange in single layer on sheet pan.

4. Roast 425°F, 12-15 min.

5. Done when tips are slightly charred and spears are tender-crisp.

6. Squeeze lemon, shave parmesan.

Size & Portion Guide

Thin/pencil asparagus: 8-10 min (watch closely — burns fast).

Standard: 12-15 min.

Thick/jumbo spears: 15-18 min, or halve lengthwise.

The snap test for trimming works regardless of thickness.

Secondary Method STOVETOP

Griddle/sauté med-high 5-7 min.

Pro Tip

Professional kitchens often prefer stovetop for deeper char. Both are excellent.
