Roast 425°F, 20-25 min with oil.

Roasting creates crispy, caramelized edges that transform broccoli from boring to addictive. The Maillard reaction on the floret tips is the magic.

Step-by-Step

1. Cut into florets with some stem attached.

2. Toss with oil (generous), salt, pepper.

3. Spread on sheet pan — cut-side down, not crowded.

4. Roast 425°F, 20-25 min.

5. Don't flip — let the flat sides get deeply charred.

6. Edges should be dark and crispy, stems tender.

7. Squeeze lemon, optional red pepper flakes.

Size & Portion Guide

Small florets (1 inch): 18-22 min.

Standard (2 inch): 20-25 min.

Large/with thick stem: split stems lengthwise so they cook evenly, 22-28 min.

Broccolini/baby broccoli: 12-15 min (much thinner).

Secondary Method STOVETOP

Sauté med-high 5-7 min, or stir-fry in wok.

Pro Tip

15 min leaves stems tough — give it 20-25 min. Wok stir-fry is equally excellent (Chinese tradition).
