Best Method STOVETOP

Blister in hot oiled pan over high heat 3-5 min.

Blistered in a hot pan is THE classic preparation. Fast, easy, and gives perfect charred blisters. The whole point is the stovetop char.

Step-by-Step

1. Wash and dry thoroughly.

2. Heat pan over high + light oil.

3. Add peppers in a single layer.

4. Don't move for 1-2 min until blistered on one side.

5. Toss/shake pan.

6. Continue 1-2 min until blistered all over.

7. Transfer to plate. Finish with flaky salt + squeeze of lemon.

Size & Portion Guide

All shishitos are roughly the same size.

Cook in batches if you have a lot — crowding prevents blistering.

Secondary Method OVEN

Roast 425°F, 10-12 min.

Don't Have Cast Iron?

Any pan works — even nonstick. Just get it hot. Cast iron isn't necessary for peppers.
